Sakura syrup — 10 ml
Agar powder — 10 g
Hot water — 150 mlCoconut Drink Base
Coconut water — 50 ml
Cane sugar syrup — 20 ml
Coconut drink mix — 7 g
Hot water — 20 ml
Ice water — 30 mlBlue Curaçao Cream Foam
Original cream foam powder — 12 g
Water — 40 ml
Blue curaçao syrup — 5 mlOthers
Ice cubes — Fill to 80%
Directions
Prepare the sakura agar jelly
Combine 10 ml sakura syrup and 10 g agar powder with 150 ml hot water, stirring until fully dissolved.
Allow the mixture to cool and set, then cut into small cubes.
Place 130 g of sakura jelly into the bottom of the serving cup.
Prepare the coconut drink base
Fill the serving cup with ice to about 80%.
Mix 50 ml coconut water with 20 ml cane sugar syrup and pour into the cup.
In a separate container, dissolve 7 g coconut drink mix in 20 ml hot water, then add 30 ml ice water. Pour into the cup.
Prepare the blue curaçao cream foam
Whip 12 g cream foam powder with 40 ml water until light and airy.
Gently mix in 5 ml blue curaçao syrup.
Assemble
Slowly pour the blue curaçao cream foam over the coconut drink to create a clean layered finish.
