Winter Melon Lemon Jelly Tea
Winter Melon Flavor Syrup and lightly roasted oolong meet a bright lemon base and chewy brown sugar jelly in this refreshing winter melon tea.
Winter Melon Lemon Jelly Tea centers on Winter Melon Flavor Syrup and Golden Mountain Lightly Roasted Oolong Tea. A prepared lemon base and Brown Sugar QQ Jelly complete the drink with balanced acidity and a chewy texture.
Winter Melon Flavor Syrup provides a mellow sweetness, while the lemon base adds a brighter finish. Golden Mountain Lightly Roasted Oolong Tea keeps the tea character present between the sweet and tart flavors. Compared with a winter melon drink prepared only with water, the oolong base gives the recipe more depth and makes it a better fit for an iced tea collection. The Brown Sugar QQ Jelly is also prepared with oolong tea, connecting the topping to the tea served in the cup.
Dark brown jelly at the bottom, amber winter melon oolong tea, and lemon slices above create visible color variation. The ice keeps the tea looking clear, while rosemary adds a green accent at the top. Customers can see the jelly through the cup, making the drink’s chewy texture easy to identify in menu photography, counter displays, and warm-weather promotions.
Bubble tea shops and cafés can prepare this drink using an existing oolong tea base, flavor syrups, and jelly topping. Once the lemon base, Winter Melon Flavor Syrup, and tea portions are standardized, staff can follow the same assembly sequence for each order. Brown Sugar QQ Jelly can also be used in other winter melon teas, brown sugar drinks, and fruit teas, increasing its use across the menu.

🏷 Tips
Test Different Tea Bases for Menu Extensions
Golden Mountain Lightly Roasted Oolong Tea preserves the sweet winter melon flavor and lemon acidity, making it the recommended tea base for the original recipe. Beverage brands can also test other tea varieties based on their menu direction:
Four Seasons Oolong Tea: Offers a lighter tea profile suited to spring and summer iced tea collections.
Jasmine Green Tea: Adds floral notes and works well in fruit tea collections.
Assam Black Tea: Provides a fuller tea body that complements the deeper flavors of winter melon and brown sugar jelly.
Roasted Oolong Tea: Adds a more noticeable roasted character suited to fall, winter, or brown sugar-themed menus.
After changing the tea base, retest the tea strength, Winter Melon Flavor Syrup, and lemon acidity. Record a separate formula for each tea variation.
Follow a Fixed Assembly Sequence
Add the brown sugar jelly first, followed by the ice, lemon slices, and tea. Pour in the prepared lemon base last. Following the same assembly sequence helps keep the jelly visible at the bottom of the cup and prevents the lemon slices from being pressed beneath the other ingredients. It also helps the finished drink match the presentation shown in menu photography.
Use Small-Batch Testing to Set Store Standards
Before adding the drink to the menu, prepare small test batches with different tea bases. Record the tea strength, Winter Melon Flavor Syrup, lemon base, ice level, and jelly portion for each version. After confirming the final formula, convert the syrup measurements into pump counts and set a standard number of scoops for the jelly so staff can follow the same preparation procedure.
