A Honeydew Fruit Tea Built on Camellia Oolong Tea

Honeydew camellia oolong tea is a honeydew fruit tea built on a floral oolong base, with jelly made from the same tea on top. In a clear glass it reads as two colors: a bright green honeydew layer at the bottom, pale gold oolong above it, and soft, see-through jelly resting among the ice.

The honeydew comes first, sweet and melony, then the camellia oolong follows with a light floral note and a real tea finish, so the cup tastes like tea and not just syrup. The jelly is made from that same oolong, so when you reach it the flavor carries straight through — one more layer of the tea rather than a different one.

It earns a menu spot in two ways: the green-to-gold layering looks good in a clear cup and on camera, and the camellia oolong gives it a grown-up, floral character that sets it apart from a plain honeydew drink. Lock in the syrup, tea, ice, and jelly amounts and the team can build it the same way every time — and the same oolong and jelly stretch into other floral fruit teas.

Note: Scale proportionally. Chill and store per your food-safety rules, and set a fixed cut size or scoop so every cup gets the same amount.

🍹Directions

  1. Build the honeydew base
In the serving cup, stir 30 ml honeydew syrup, 10 ml cane sugar syrup, and a splash of the camellia oolong tea together until the syrup is fully mixed in.

  2. Add ice

Fill the cup to about 80%, leaving room for the rest of the tea and the jelly.

  3. Pour in the camellia oolong tea
Pour the remaining tea slowly down the inside of the cup, then stir just 2–3 times so the honeydew base blends up into the tea while the color shift stays visible.

  4. Top with jelly
Add 2 scoops of camellia oolong tea jelly on top. Once it settles, serve; stir to combine before drinking if you like.

🏷 Tips

  • Other floral fruit oolongs. Keep the shape — fruit syrup, floral oolong, matching jelly — and try white peach, lychee, or grape. Each fruit sits at a different sweetness and color, so re-dial the syrup, the tea strength, and the jelly for every one.

  • Swap the topping. The camellia oolong jelly can give way to agar pearls, aloe, or coconut jelly. After a swap, recount the ice and liquid room and make sure the topping doesn’t cover the floral tea underneath.

  • Compare it with another honeydew oolong. For a different floral take, see our Honeydew Osmanthus Oolong Tea — that one leans on honeydew, osmanthus, lemon, and mint, while this page goes the camellia-oolong-and-matching-jelly route.
